Raspberry, Coconut, and White Chocolate Muffins

Raspberry, Coconut, and White Chocolate Muffins are a delightful treat that combines the tanginess of raspberries, the sweetness of white chocolate, and the tropical flavor of coconut. Ingredients:

  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 cup milk

  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup shredded coconut
  • 1/2 cup white chocolate chips

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Gently fold in the raspberries, shredded coconut, and white chocolate chips.
