Thai Red Curry Tofu

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons of Thai red curry paste
  • 1 can of coconut milk
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 cup of broccoli florets
  • 1 tablespoon of soy sauce
  • 1 tablespoon of coconut sugar

Reduce the heat to low and let the curry simmer for about 10 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking. Taste and adjust the seasoning if needed.
